Vegan Matcha Chocolate Chip Cookies

I made these green tea cookies the other day using Japanese green tea powder, also known as Matcha. Traditionally, matcha has been used in Japanese tea ceremonies. However, in recent times matcha has been used in various Japanese sweets and sometimes even in soba noodles.

Today I made chocolate filled mochi! I first made chocolate truffles using organic cream and then wrapped them in mochi. I made the mochi out of mochiko and water. I finished them off by dusting them in cocoa powder.

Today’s Mommy and Me ESL Class: Baking Cookies

In today’s Mommy and Me ESL Class we made vegan sugar-free cookies.

Everyone took part in mixing all of the ingredients together and then decorating their cookies with dried fruit and vegan chocolate chips!

These cookies are delicious and healthy too!

Here is the recipe:

210 grams of flour

4 tablespoons of agave syrup

4 tablespoons of organic canola oil

a pinch of salt

1.  Mix dry ingredients and then add wet ingredients.

2. Mix ingredients until well combined and then roll the dough into a ball.

3. Let dough rest in the refrigerator for 30 minutes.

4. Roll out the dough and use your favorite cookie cutters to cut the cookies into cute little shapes!

We made a Vegan Mushroom Stew, Vegan Borscht, Potato Latkes, and Apple Strudel.

   It was a lot of hard work to grate the potatoes but in the end it really paid off and we were all able to enjoy delicious latkes with apple sauce.

We used phyllo dough to make the Apple Strudel. Many students were surprised by how thin and paper-like the phyllo dough was. But after layering the sheets of phyllo dough and adding delicious spicy apples to it, it became a wonderful dessert.
