Shio-koji Tomato Sauce

This past weekend’s Sunday brunch was whole wheat cous cous, organic eggs sunny side up, and shio-koji tomato sauce.

This tomato sauce came out really great so I wanted to share it with everyone. It’s actually even better the next day!

Shio-Koji Tomato Sauce

2 tomatoes
1 onion
1 tbsp of shio-koji

Chop up tomatoes and onions
Sauté onions with olive oil and sea salt
Add chopped tomatoes
Cook until sauce thickens
Turn off heat and add shio-koji
